Although this recipe is easily duplicated, the leftovers are not particularly tasty.
Ingredients
8 ounces of diced 1/4-inch red or Yukon Gold potatoes
2 teaspoons olive oil
1 little onion (diced)
1/8 of a medium red pepper (diced)
1/8 of a medium green pepper (diced)
1/8 teaspoon salt
to taste, freshly ground black pepper
The olive oil should be added to a big skillet and heated to medium-high.
Add the diced onion to the heated pan.
Add the potatoes when the onions start to brown and simmer for about 10 minutes, or until the potatoes are just starting to brown. Frequently toss.
After adding, sauté the peppers for around two minutes. Frequently toss.
Add the pepper and salt. Stir thoroughly, then plate.

Delicious home fries can be made by lightly frying the onions in less olive oil before adding the potatoes. The natural starch in the potatoes and onions is sufficient to hold the potatoes and onions together.
